Soy is involved in many healthy eating recipes. Below is a recipe for you to try. Make sure you use farm fresh, organic soybeans only.
Soy Burgers
- 2 cups soy beans
- 6 cups stock or water
- 2 tbsp. olive oil
- 4 garlic cloves, diced
- 1 lg. onion, diced
- 1 carrot, diced or grated
- 1 stalk celery, diced
- 1 tsp. sea salt
- 1/2 tsp. oregano
- 1/2 tsp. garlic powder
- 1/2 tsp. basil
- 1/2 tsp. parsley
- 2 cups cooked brown rice
- 2 tbsp real peanut butter (no sugar added)
Soak the soybeans overnight. Cook soybeans over low heat for 2 1/2 hours until soft, making sure they are always covered with water.
Sauté garlic in olive oil for 3-4 minutes. Add diced onion and cook for 5 minutes, until golden. Add carrots, celery, pepper, and seasonings. Cook for 2 minutes or until tender.
Preheat oven to 350 degrees. Oil a cookie sheet. Drain soybeans and mash well. Add mashed soybeans to the sautéed vegetables and brown rice. Add 2 tablespoons peanut butter, if desired. Form the mixture into patties and place on the cookie sheet.
Bake for 20 to 25 minutes; turn soy burgers over and bake for another 20 minutes more.
