There are some wonderful fall vegetables you can buy at the farmer’s market. Another way to get quality vegetables is to grow your own by having a garden.

More and more people are turning towards organic gardening as a way to save on groceries and to be healthy. Vegetables are also very low in calories. So if you are interested in losing weight, eating vegetables is one of the foods to include in your diet.

The hobby aspect of gardening is wonderful for the soul and allows for balance in our life. Let’s stop to smell our roses and enjoy the fruits of our labor, literally.

Fall Vegetables: Putting Up For The Winter

If you garden and you happen to have an abundance of vegetables that you harvested, then you can put them up for the winter. You can have fresh fall vegetables from your garden all winter long.

Most vegetables such as squash, green beans and snow peas, only need to be slightly blanched and then frozen. Potatoes and sweet potatoes will last for several months in a dark, cold area of your basement or root cellar. And you can also jar any vegetables that you like.

Growing basil, rosemary, oregano, and growing cilantro in pots makes it easy to bring these in for the winter months. Then they can be used all winter long as well. The rosemary plant and other herbal plants will add nicely to your kitchen's or other room's decor.

You can also dry herbs in the sun or in an oven on the lowest setting it will go. Having fresh herbs handy for cooking are a great asset to your cooking creations.

Growing your own fruits and vegetables is the best way to ensure you’re getting organic, fresh food. Gardening is a great way to relax and enjoy the beauty of nature.

In fact, gardening is good for body, mind, and spiritual health. Gardening provides light exercise as well as the emotional reward of seeing what your own labor can produce. Nature is a beautiful blessing that should not be taken for granted.

Fall Vegetables: Going To The Farmer’s

Buying produce from farmers markets is the next best thing to growing your own vegetables. Buying from your local farmers market will usually give you some pretty decent, organic fall crops and other produce.

Some of the produce you buy from the farmers can even be put up for the winter as well. For instance, fresh, organic apples should last for several months in a dark, cold room, such as a root cellar or basement.

Potatoes, spaghetti squash and winter squash should also last for two or three months in a cold room in your house.

Find out when the vegetables were picked and where they came from, and it will help to give you an indication of how fresh they are.

Fall Vegetable Recipes

Here is a nutritious and simple recipe you can use with spaghetti squash. Cut the squash lengthwise, wrap in foil and bake in oven for 45 minutes on 350 degrees. Meanwhile, prepare your favorite spaghetti sauce and pour it over the cooked squash.

Don’t forget the Parmesan cheese. Spaghetti squash got its name because of how it resembles spaghetti when cooked.

Sweet potatoes are another fall vegetable that can be used in several different ways. For an example, you can juice sweet potatoes raw. They provide more beta-carotene than carrots. Here is another easy recipe using sweet potatoes.

Peel about four or five sweet potatoes, cut into wedges, and lay them out on a cookie sheet. Drizzle olive oil, sea salt, paprika, and a dash of cayenne on the potatoes and bake in a 350-degree oven for 45 minutes. These baked sweet potatoes are absolutely scrumptious.
