Calcium is a very important mineral, especially for growing children. Calcium builds strong bones and teeth. Iron is an important mineral needed to guard the body against anemia and helping with menstrual discomfort. Magnesium is needed in small amounts to protect the kidneys and the prostate in men.
The mineral Zinc relieves angina and helps with cirrhosis of the liver. There are more minerals the body needs that aren’t listed here, but each mineral has its own job that helps keep the body functioning on optimal levels.

Many of our foods have been processed to give them a longer shelf life. Processing takes away many of the important nutrients left in the food. When fruits and vegetables are heated for canning, the B and C Vitamins are greatly reduced. Canning also leaches all of the minerals from the food into the liquid.
Food processed and stored in aluminum cans are unhealthy because the nutritional value is lost, unless you eat or drink the liquid. And even then, most of the nutrients have been processed away.
Nutrients are also lost during the milling and refining process of grain. During the processing of the wheat berry all of the B vitamins and the minerals from the bran and germ are stripped away, making refined wheat bread worthless. Whole wheat has been known as the staff of life because it is so good for the body.
