- 4 cups of cubed chicken meat
- 3 cloves of garlic, diced
- 1 large onion, chopped
- 1 bunch of fresh broccoli florets
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 small zucchini, chopped
- ¼ cup soy sauce or liquid aminos
- 1-teaspoon ginger
- Dash of cayenne (optional)
Preparation
Heat 4 tablespoons of olive oil in a stir-fry wok or pan. Cook the chicken thoroughly and then set aside. Add three more tablespoons of oil to pan and quickly stir-fry the garlic and onions. Add the rest of the veggies and sauté quickly for five minutes.
Add cooked chicken, ginger, soy sauce and a dash of cayenne if using. Cook two more minutes. Serve this tasty chicken dish with whole wheat bread and a green salad with oil and vinegar dressing.

Ingredients
- 4 chicken breasts without the bone
- Olive oil
- 3 cloves of garlic, minced
- 2 teaspoons Oregano
- 1-teaspoon thyme
- 1-teaspoon tarragon
- Dash of cayenne
- Salt and pepper
Preparation
Coat a baking dish with olive oil. Mix spices, garlic and herbs together and rub on chicken pieces. Place in the baking dish and add salt and pepper. Drizzle with a little bit of olive oil. Bake for one hour in a 325-degree oven. Enjoy this healthy chicken recipe with a side of steamed veggies and a green salad.

Baked whole roast chickens are another easy way to prepare chicken. Take one whole roaster and rub olive oil and rosemary under the skin and inside the cavity. Place in a roasting pan. Add four chopped potatoes, two chopped carrots and one large chopped onion, and place around the chicken.
Salt and pepper the chicken. Add ¼ cup water in bottom of pan, cover with foil and cook for 1 hour and 30 minutes in a 350-degree oven. Take foil off the last 20 minutes of cooking.
Serve this tasty roast chicken dish with a dark green salad and whole-wheat rolls. Left over chicken can be used to make chicken salad. Mix with mayonnaise and one small onion with a dash of salt and pepper. Serve over green salad or you can put it between two pieces of whole wheat bread for a chicken salad sandwich.
