Healthy Soup Recipes: Beef Stew

When preparing beef stew there are a couple of healthy eating guidelines to bear in mind to keep this recipe healthy. There is no reason to buy fatty meat for this dish because it sincerely won’t make the stew taste any better.

The vegetables are what give the broth in beef stew its flavor. Meat is only ¼ of this dish and should not overwhelm this dish.

Ingredients For Beef Stew

  • 6 oz lean beef tenderloin tips, diced
  • 3 cloves of garlic, diced
  • 1 cup of baby onions
  • 3 carrots, sliced
  • 2 celery sticks, sliced
  • 4 potatoes, diced
  • 2 roma tomatoes, chopped
  • ¼ cup red cooking (dry) wine (optional)
  • Olive oil
  • 1-teaspoon rosemary
  • ½ teaspoon garlic powder
  • ½ teaspoon thyme
  • 2 bay leaves
  • Sea salt and pepper
  • 2-tablespoon flour
Preparation

In a large soup pot, sauté the garlic and onions in olive oil. Add the beef tips and cook for two minutes. Add the flour and mix well. Add the wine and cook for one minute. Add 6 to 8 cups of water, bay leaf, and the rest of the vegetables and bring to a boil.

Turn down heat and simmer for 1-½ hours. Add the herbs and cook for another half hour. Serve this with a green salad and whole wheat bread.

Healthy Soup Recipes: Cabbage Soup

Cabbage soup should be included in all of your healthy eating plans. Cabbage gives broth lots of magnificent flavor. Oprah Winfrey raves about cabbage soup as being a perfect weight loss method.

Cabbage soup is very healthful, and this recipe is easy to make. This particular recipe has a very tasty broth, and it would be good to give to those who are sick with a cold or flu.

Cabbage Soup Ingredients

  • ½ head of cabbage, chopped
  • 3 cloves of garlic
  • 1 large onion
  • 1-12 oz can crushed tomatoes (salt and sugar free)
  • 1 stalk of celery, diced
  • 1 carrot stick, diced
  • Olive oil
  • 1-teaspoon basil
  • ½ teaspoon oregano
  • ½ teaspoon tarragon
  • 1 bay leaf
Preparation

Sauté onion and garlic in olive oil. Meanwhile wash and chop the vegetables and add them to the soup pot. Add 6 to 8 cups of water and bring to a boil. Turn down heat and simmer for one full hour. Enjoy with freshly grated Parmesan cheese and whole-wheat rolls.
