Curried Lentils
Ingredients
- 2 cups lentils
- 1 large onion, diced
- 2 cloves garlic, diced
- ˝ red bell pepper, diced
- 1 or 2 roma tomatoes, diced
- 3 tablespoons parsley
- ˝ teaspoon cayenne
- 2 to 3 teaspoons curry powder
- 1-teaspoon garlic powder
- ˝ teaspoon ginger
- ˝ teaspoon coriander
- 4 tablespoons olive or safflower oil
- 1-teaspoon sea salt
Preparation
Wash lentils and cover with water in a soup pot. Bring to a boil and then turn down to low heat and simmer for one hour. Meanwhile in a separate pan, sauté the garlic and onions in olive oil, on medium heat. When onions become transparent add the bell pepper and cook another five minutes.
Add the vegetables, parsley, and all of the spices to the cooked lentils and stir well. Cook for another five minutes and then taste for salt. You may want to add more curry or ginger. This healthy soup goes well with whole grain bread and a side green salad.
