How do we go about finding out nutrition in food? What is the difference in nutritional values concerning fresh foods and processed foods? Food labels generally tell us calorie and fat content of processed foods.

Fresh foods are well known for their nutritional content and can be found online and in nutrition books. Fresh food is always going to be more beneficial to the body in many ways.

Nutrition in Food: Fresh Is Best

Surveys tell us that more and more people are trying to give up processed foods. Even so, it has been estimated that 75% to 80% of a person’s diet in the United States is made up of ready-to-eat foods. That’s a lot of processed foods.

Did you know that even the nutritional value of fresh produce diminishes in between harvest time and the dinner table? You have to take into account shipping time, organizing, labeling and finally selling the food to the public.

All of this takes considerable time. But there are ways in which you can still ensure freshness and nutrition from the food you buy. Here’s how.

Shop for fresh fruits and vegetables frequently rather than once a week. Always strive to buy what’s local and in season from local farmers in your area. Find out where the farmer’s market is in your community and buy what is fresh.

Use your fresh veggies and fruits as soon as possible. If you are unable to use your produce right away, store onions and other root vegetables in a cool dark room. Store fruits and vegetables in the refrigerator.

Nutrition in Food: Preserving Vitamins

For a ready supply of wholesome snacks, you can dry your own fruit and some vegetables in the oven or in a food dehydrator. Choose fresh, firm fruit that is just ripe.

Leave berries whole, but peel, core, and thinly slice other fruits. To prevent fruits from browning like apples tend to do, coat them in some lemon juice before drying.

If you are using a conventional oven for drying your fruit, have the temperature between 120 and 140 degrees Fahrenheit. Place the fruit on baking sheets and rotate them from time to time. Fruit is done drying when it feels leathery and dry to the touch.

Nutrition in Food: healthy Foods

Organically grown fruits, vegetables, wheat, meat and dairy will be the healthiest foods for you to eat. But there are some benefits to certain foods when eaten on a consistent basis. Some foods have anticancer properties that should be included in your daily diet often.

While all fruits and vegetables contain antioxidants, some of them also contain anticancer agents. Besides the crucifers (cabbage family), the following fresh/organic foods are excellent for your health. Of course this is not a complete list.

Corn, asparagus, peas, onions, garlic, celery, grapes, berries, grapefruit, kiwifruit, figs, dates, bananas, oranges, pumpkin, soybeans, sweet potatoes and tomatoes. And remember, healthy eating and a healthy diet should include five servings each of fruits and vegetables a day!
