Lasagna Dinner Recipe

  • 1 lb whole grain lasagna noodles
  • ½ lb of each ground beef and ground turkey
  • 3 roma tomatoes, chopped
  • 3 cloves of garlic, chopped
  • 1-24 ounce can of tomato sauce (no sugar/salt added)
  • 2-½ cups jack or mozzarella cheese, grated
  • 3 tablespoons whole-wheat flour
  • 1 cup soymilk or cows milk
  • 1-cup Parmesan cheese, grated
  • 1-teaspoon oregano
  • 2-teaspoon basil
  • Pinch of nutmeg
  • Olive oil
  • 2 tablespoons real butter
  • 1-teaspoon sea salt
Cook the lasagna noodles according to package directions and set aside. Grate both cheeses and set aside. Sauté garlic in oil. Add turkey and beef and brown over medium heat. Add tomatoes, basil, oregano, sea salt, nutmeg and tomato sauce. Turn down heat, cover and simmer for 30 minutes.

To make the white sauce, melt butter in a small saucepan. Add the flour until well coated. Slowly pour in the milk and stir continuously until thickened, add sea salt to taste. Now it’s time to build the lasagna. Have the grated cheeses and both the red and white sauce easily accessible in front of you.

Layer the bottom of a 9” by 11” baking dish. Layer bottom with 1/3 of the lasagna noodles. Add 1/3 of the red sauce and ½ of the white sauce. Add 1/3 of the jack cheese and ½ of the Parmesan cheese. Make two more layers using the rest of the ingredients, ending with red sauce and the cheese. Bake for ½ hour in a 350-degree oven. Yum!
