Recipes For Healthy Food: Baked Potato Boats

Instead of grabbing for that bag of potato chips, try this healthy baked potato recipe.

Ingredients:

  • 2 large baking potatoes
  • 1 lb banana squash (3/4 cup)
  • ¼ cup real butter or safflower oil
  • 1-teaspoon sea salt
  • 1-teaspoon paprika
  • 2 tablespoons olive oil
Preparation:

Bake the potatoes for about 60 minutes at 400 degrees. While the potatoes are baking, cut the skin from the squash. Cut into small cubes and place in vegetable steamer for about 15 minutes or until soft. Cool the potatoes slightly, and cut in half. Gently remove the potato pulp from the skin, being careful not to rip the potato skin.

Combine the squash, potato pulp, butter or safflower oil and sea salt until you have a creamy yellow puree. Heap the potato-squash mixture into the empty potato shells. Brush with two tablespoons olive oil or butter and sprinkle with paprika. Place under the broiler for about five or ten minutes. Serves two.

Recipes For Healthy Food: Cucumber and Carrot Salad

This is a great salad to eat when it is hot and you want something cool, refreshing and healthy to eat.

Ingredients:

  • 1 celery stalk
  • 4 carrots
  • 1 large cucumber
  • 1-bunch kale greens, spinach, or romaine lettuce
  • ¼ cup olive oil
  • 1-teaspoon turmeric
  • 1 teaspoon Dijon mustard
  • 1-teaspoon sea salt
  • Juice of one lime
Preparation:

Wash and scrape vegetables. Dice celery. Cut carrots into matchsticks. Cut the cucumber once lengthwise and then slice. In a big salad bowl add the kale greens or Romaine lettuce. Add the rest of the vegetables. Mix the salad dressing ingredients together and mix gently in the salad. Serve this salad with the potato boats for a wonderful dinner.

Recipes For Healthy Food: Broiled Salmon Steak

Fish is a heart healthy food and should be eaten at least three times a week. This recipe is not only easy to cook, but also very healthy.

Ingredients:

  • 2 salmon steaks
  • 2 tablespoons olive oil
  • Dash of cayenne pepper
  • ¼ teaspoon sea salt
  • 1-teaspoon thyme
  • 1 teaspoon lemon juice
Preparation:

Preheat broiler. Wash and pat dry the fish. Combine the ingredients in a bowl. Brush both sides of the fish steak with the sauce mixture. Place about four inches under the broiler and cook each side for four to five minutes. Brush steaks frequently with the sauce. Serves two.

Healthy Food Recipe: Fruit Smoothie

Fruit smoothies are refreshing fruit drinks that are great to have in the morning for breakfast. And they are so simple to prepare.

Ingredients:

  • 1-cup fresh orange or apple juice
  • 1 frozen or fresh banana
  • ¼ papaya, 1 cored apple, 1 peach, 1-cup strawberries, or ½ cup of any fruit you desire
Preparation:

Add juice, fresh or frozen banana, and fruit of your choice in the blender on liquefy. Makes one large or two small fruit smoothies.
