Student Recipes: Beef Ginger Stir Fry
Ingredients:
- 3-0z lean beef cut into strips
- a handful of fresh broccoli
- ½ onion
- 2 cloves of garlic
- 1-teaspoon ginger
- 2 tablespoons olive oil
- soy sauce
Heat olive oil up in medium high wok. Cook beef strips quickly for 2 minutes, always stirring. Toss in garlic, onion, and broccoli and cook for another five minutes. Add ginger and about ¼ cup soy sauce more or less. Some people like more soy sauce and some like less, so it is to your preference. Enjoy!
Student Recipes: Chicken Sesame Stir Fry
This is another easy recipe. The student will love cooking these meals.
Ingredients:
- 3-oz chicken cut up
- ½ cup green bell pepper, diced
- ½ cup red bell pepper, diced
- ½ onion
- 2 garlic cloves
- soy sauce
- olive oil for cooking
- ¼ cup sesame seeds
Cook chicken pieces on medium high until it is not pink, then toss in sesame seeds and cook for another minute. Then toss in vegetables and ginger and cook for five more minutes. Add ¼ cup soy sauce, or however much you like, and cook for one more minute. Scrumptious!
Student Recipes: Vegetable Sunflower Stir Fry
If a student is a vegetarian they will love this vegetarian stir fry recipe. This dish calls for vegetables of your choice.
Ingredient examples:
- bell peppers
- broccoli
- cauliflower
- cabbage
- zucchini squash
- green beans, etc.
- 2 tablespoons olive oil
- 1- teaspoon ginger
- soy sauce
The trick to making a good stir fry without letting the vegetables get mushy is cooking them quickly on medium high heat.
Quick wok cooking retains vitamins in the food. Always make sure your oil is heated up quite nicely and then toss in your vegetables, always stirring them.
Never let the vegetables sit in the wok without being tossed about. Once your oil is heated, toss in your vegetables and any nuts and seeds you like. Cook vegetables for only about five minutes so they remain crisp.
At the last one-minute of cooking, add your soy sauce and mix in. All stir-fry’s go well with brown rice on the side or tossed right in with the vegetables, whichever you prefer.
Student Recipes: Brown Rice Stir Fry With Scrambled Eggs
This is another meatless dish but uses eggs instead, and it tastes great!
Ingedients:
- olive oil for cooking
- 1 green bell pepper, chopped
- 1 jalapeno pepper chopped
- ½ onion, chopped
- a large handful of broccoli
- 2 cloves of garlic
- 1 or 2 eggs
- ¼ cup sunflower seeds
- ½ cup brown rice
This recipe involves a little bit more cooking but is well worth it. Cook the brown rice according to package directions and set aside. Scramble two eggs and set aside.
Heat up 2 tablespoons of olive oil in wok on medium high setting. Toss in sunflower seeds and cook for one minute. Then toss in all vegetables, always stirring, for five minutes. Add ¼ cup soy sauce and ginger and mix; add your already cooked rice and mix; add scrambled eggs, stir to mix.
This is a nutritious high protein meal. Have a green salad on the side and whole wheat bread. All of these healthy eating plans are excellent for the busy student.
