Textured Soy Protein
Textured soy protein is made from defatted soy flour. It sounds kind of unpleasant but many soy food enthusiasts use it like meat eaters would ground meat. It is re-hydrated with boiling water and used to make marvelous kitchen creations.
You can replace soy protein in all recipes that call for ground beef, turkey, or lamb. This makes it especially great for vegetarians. It is actually very good for you and is full of protein and barely any fat content. Apparently it is also a good source of fiber.

- 1-1/2 lbs lean ground beef or use I cup more TSP
- 3 eggs
- 1/4 cup chopped onion
- 1 cup skim milk or soy milk
- 1 tsp salt
- ¼ cup parsley
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1 tbs Worcestershire sauce or soy sauce
- 1/2 tsp ground pepper
- 1/2 tsp dry mustard
Mash the soybeans in a food processor or blender. Mix thoroughly with the ground beef or if meatless with the TSP. (If using TSP, re-hydrate with 1/2 cup boiling water and let sit 5 minutes before mixing with ground meat.) Add the eggs and onion and mix well.
